One of the most common questions we receive from pastry chefs, hotel F&B managers and chocolatiers across Dubai is: "Should I be using silicone or polycarbonate molds for my chocolate work?" The honest answer is: it depends on what you are making, how you are making it, and whether you need a custom design.
Both silicone and polycarbonate molds have their place in a professional chocolate kitchen. Understanding the strengths and limitations of each will help you make the right investment.
Polycarbonate Chocolate Molds
Polycarbonate is the gold standard for high-gloss chocolate shells. The rigidity allows you to tap and vibrate the mold to remove air bubbles, and the hard surface produces a mirror-like finish that gives bonbons their classic gloss.
Best for: High-gloss chocolate shells, standard catalog shapes, high-volume production of standard shapes.
Limitations: Cannot produce shapes with undercuts, catalog-only (custom requires large MOQ from factory), less forgiving of temperature errors.
Custom Silicone Chocolate Molds
Custom-engineered silicone offers something polycarbonate categorically cannot: complete design freedom. Because silicone is poured around a master form and then cured, it can reproduce virtually any shape — including logos, Arabic calligraphy, architectural shapes and complex geometries.
Best for: Any custom shape or branded design, complex shapes with undercuts, filled pieces and softer ganache centres, small to medium production runs.
Trade-off: Silicone molds do not produce the same mirror-gloss finish as polycarbonate. For very high gloss as the primary goal, polycarbonate remains the better choice.
The Professional Kitchen Reality
Most serious chocolate operations in Dubai use both. Polycarbonate for standard truffle production, and custom silicone molds for branded amenity pieces, Ramadan collections, and signature plated dessert components. This is exactly what we recommend: use polycarbonate where catalog shapes work fine, and invest in custom silicone where your brand requires something unique.
